A Blog with a Plan

I’ve been trying to come up with a plan of attack for this blog adventure.  I found my first gray hair this weekend, and I really hope the two aren’t related.  (Don’t worry, though, it’s gone now.  I know I can’t do that with every one, but it seemed appropriate for the first one.)  Regardless, I think I have a starting place now…I’ll post my menu plan for the week and then choose one recipe to post in more detail.

This week, we’re planning on Pasta with Tuna and Capers, Pasta with Roasted Sweet Potatoes, Skillet Hoppin’ John, and Loaded Baked Potato Soup.

The first three are from Mark Bittman‘s Food Matters Cookbook (where I got the subtitle for the blog) and the last one is from the latest Penzy’s catalog.


Ironic Dinner

I spent a significant amount of time today working on getting my domain name, hosting, and blog started.  I only took a break to go out for sushi and take a nap.  I didn’t even cook dinner.  Kip had leftovers and I am having a mug of Campbell’s Cream of Mushroom soup.  I find this amusing since the blog is going to focus on real food and home cooking.

Bacon Corn Cakes

Made these corn cakes for Kip’s birthday breakfast. I skipped the salsa, left out the cilantro and added a cup of chopped, cooked bacon. They were great. I’m going to freeze the leftovers and warm them up in the toaster.


Pasta with Bacon and Corn

I made this for dinner tonight. It was really good. We used 4 cloves of garlic and I’d recommend (lots) more bacon. :)


Summer Salad

Local lettuce

+3 fresh peaches

Polenta Pizza

The crust was too soft to pick up.  Mark Bittman recommends making the crust 1/2” thick before baking.  I think mine was too thin, plus I added weight and moisture from the tomato sauce.  It might not have been finger food, but it was fantastic.
